
Ingredients
- 3 eggs, beaten
- 2 cups sugar
- 2 cups grated zucchini
- 3 cups flour
- 1 teaspoon salt
- ½ cup chopped nuts
- 1 cup Crisco oil
- 2 teaspoons vanilla
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
Instructions
- Beat eggs, add oil, sugar, zucchini and vanilla. Cream together.
- Sift flour, soda, baking powder, salt, cinnamon. Add to creamed mixture. Mix well.
- Add nuts.
- Fill pans ½-¾ full.
- Bake in 2 greased pans for 1 hr at 325°.
