What’s Cooking Wednesday – Mom’s Zucchini Bread

TastyTuesday, RecipeSo I wanted to join in to the “What’s Cooking Wednesday” and decided to share my Mom’s Zucchini Bread recipe.  This is one that has been in the family for years and is great to get some veggies into your kids if they don’t like them, by disguising them as dessert!! 🙂  Enjoy!!
Mom’s Zucchini Bread


Servings: 12

Mom’s Zucchini Bread


  • 3 eggs, beaten
  • 2 cups sugar
  • 2 cups grated zucchini
  • 3 cups flour
  • 1 teaspoon salt
  • ½ cup chopped nuts
  • 1 cup Crisco oil
  • 2 teaspoons vanilla
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda


  • Beat eggs, add oil, sugar, zucchini and vanilla. Cream together.
  • Sift flour, soda, baking powder, salt, cinnamon. Add to creamed mixture. Mix well.
  • Add nuts.
  • Fill pans ½-¾ full.
  • Bake in 2 greased pans for 1 hr at 325°.
