I wanted to start doing something about recipes here at TigerStrypes Blog. I see so many others having some great things on theirs, and figured it would be fun to share different ones here at TigerStrypes Blog. I love finding new ideas on Pinterest, or other social media and actually making something yummy for my family.  I always hear of families having Taco Tuesday or Meatloaf Monday, and sorry, that’s just not for me. There are a few recipes that I use that are saved in my special recipe file, and I’ll make those a little more often than others. I just want to offer my husband and our son different choices. I don’t want us to get bored with the same thing and the same flavors. Now don’t get me wrong, when things are on sale at the grocery store, I’ll be figuring out all different things to make with that. I’ve heard the “Oh Mom, Chicken Again?” drama line from DJ, but hey, if you don’t want to eat, then see ya!! Like the sign says in my kitchen…”You have 2 choices for dinner…Take it or Leave it!”. Pick one! 🙂

So with this “Recipes & More! – #TastyTuesday” weekly blog post, I’m going to change it up from what I normally did, with the desserts, etc. from a box.  I’ll now be adding all different types of recipes that my family has enjoyed.  I will try and give credit where it’s due, if it’s one I found on another website, but if I forget and you know who’s the recipe is, than be sure to leave a comment below. 🙂

This week’s recipe is for “Lemon-Poppy Seed Cake“.  I found this recipe on a box of Betty Crocker Lemon Cake mix.  It was very easy to make and could have anything else added to it.  The recipe actually calls for a frosting (which I’ll include), but I decided not to put that on the top.  Figured that the less sugar incorporated, the better! 🙂  Enjoy this yummy simple recipe, and I hope that you and your family like it!

"Lemon-Poppy Seed Cake"

Prep Time: 20 minutes

Cook Time: 45 minutes

Total Time: 1 hour, 15 minutes

DESSERT

Yield: 12

"Lemon-Poppy Seed Cake"

Ingredients

  • 1 box lemon cake mix
  • 1 C water
  • ½ C vegetable oil
  • 3 eggs
  • 2 T poppy seeds
  • ½ C lemon frosting

Instructions

  • Heat the oven to 325°. Spray some cooking spray and then sprinkle flour in a fluted cake pan.
  • Make the batter as directed on the box, but add the poppy seeds into the batter. Pour it into the prepared pan.
  • Bake the cake as directed on the box for a fluted tube pan. Let it cool in the pan for 15 minutes; turn it upside down onto a serving plate. Gently remove from the pan; let the cake cool completely, takes about 1 hour or so.
  • In a microwavable bowl, microwave the frosting uncovered on Medium for about 15 seconds.
  • Spread the frosting evenly over the top of cake, allowing some of it to drizzle down the sides.
  • Enjoy!
