Recipes & More! – #TastyTuesday

I wanted to start doing something about recipes here at TigerStrypes Blog. I see so many others having some great things on theirs, and figured it would be fun to share different ones here at TigerStrypes Blog. I love finding new ideas on Pinterest, or other social media and actually making something yummy for my family.  I always hear of families having Taco Tuesday or Meatloaf Monday, and sorry, that’s just not for me. There are a few recipes that I use that are saved in my special recipe file, and I’ll make those a little more often than others. I just want to offer my husband and our son different choices. I don’t want us to get bored with the same thing and the same flavors. Now don’t get me wrong, when things are on sale at the grocery store, I’ll be figuring out all different things to make with that. I’ve heard the “Oh Mom, ChickenAgain?” drama line from DJ, but hey, if you don’t want to eat, then see ya!! Like the sign says in my kitchen…”You have 2 choices for dinner…Take it or Leave it!”. Pick one! 🙂

So with this “Recipes & More! – #TastyTuesday” weekly blog post, what I decided to start with is making something you see on a box mix. How many times do you buy a cake mix or a bag of mix for cookies, and always see that recipe on the side, but never make it? I figured it would be fun to go through my pantry and use the ones I had and make something from what it shows. I saw that some of the mixes I had didn’t have a recipe on them, so for those, I’ll be heading to the manufacturer’s website to find one for the mix, if applicable, and sharing that. Be sure to share a favorite from your blog at the end, as well!!

This week’s recipe is for “Cinnamon Roll Cookies“.  I had a box of Krusteaz Snickerdoodle Cookies and wanted to make something different and yummy. They were very easy to make and tasted great!! I really don’t like Snickerdoodle cookies…I know, I’m weird…so I thought it would be fun to change it up.  These cookies are so good and were so easy to make.  I think the reason I like them more than the regular kind, is that they are a lot thinner.  You don’t get so much sweet taste at once, which is great!! And, with the added nuts, it was even that much better!  Just a warning, the mix does contain wheat and with the nuts, if you have allergies, you might want to just look at the picture! 🙂

Cinnamon Roll Cookies

Ingredients

  • Cookies:
  • 1 pouch Krusteaz Snickerdoodle Cookie Mix
  • ½ cup (1 stick) butter, softened
  • 1 egg
  • 2 tablespoons Cinnamon-Sugar Topping (enclosed)
  • ½ cup chopped nuts
  • Drizzle:
  • ¾ cup powdered sugar
  • 2 tablespoons milk

Instructions

  • To make the cookies, start by blending the cookie mix, butter & egg until a dough forms.
  • Transfer the dough to floured surface.
  • Roll it into a 12" x 8" rectangle. Doesn't have to be perfect.
  • Sprinkle the cinnamon-sugar and the nuts over the dough. Leave a little room on the edges, so that it can stick together better.
  • Starting with the 12" side of the dough, roll it into a tight log.
  • Cover the log, and refrigerate it until it's firm (only took about 30 minutes).
  • Preheat your oven to 375°.
  • Next, cut the log into ¼" slices. Be careful to keep the nuts in the roll. I used a flat rubber spatula to help keep it together and put it on the baking sheet.
  • Place cookies about 1" apart from each other, onto a greased cookie sheet (I used parchment paper).
  • Bake at 375° for 7-9 minutes. Living at a high altitude, this took a lot longer than that, so just be sure to keep your eye on the cookies and remove them when they look done. They will still be a little soft and will finish up out of the oven.
  • For the Drizzle (if you choose to use it): Stir together sugar and milk until smooth. Drizzle over cooled cookies.
  • Enjoy!!

Notes

A great way to use the Krusteaz Snickerdoodle cookie mix for something else. Tasted great, and were very easy to make!

What do you think? Does this look like something you would make? The recipe called for powdered sugar and milk to be combined, melted and drizzled on top, but I didn’t think it needed any more sweetness. 🙂  Hope you like it!

These cinnamon roll cookies look so yummy. They remind me of a cookie that my grandmother used to make when I was a little girl.
